Lovely Lamb Lasagne

An absolute winner!



Ingredients
- 9-10 Lasagne sheets
- 350 g cooked lamb mince meat
- 500g red bolognese sauce
- Tub of cream cheese (I used philadephia)
- 1.5 Peppers
- 250g Mushrooms
- Handful Sweetcorn
- 1.5 red chillies
- 1 Ball mozzarella 
- Small handful grated cheddar
-2 tbsp vegetable oil
-Salt

Serves: 6         Preparation time: 15 minutes                      
Cooking time: 45 minutes


Step 1


  • Heat 2 tbsp vegetable oil in large pan, add sliced mushrooms, sliced red chilly and peppers and fry on medium heat for around 6 minutes
  • Add the sweetcorn, 1/2 tsp salt, mince meat and 3/4 bottle of sauce. Add 100ml water
  • Stir well 
Step 2
  • Spread cream cheese on the lasagne sheets using a knife
  • Put the first layer on the base of the ovenproof dish (30cm X 20 X 6cm), with the cream cheese facing upwards
  • Spoon a layer of the mince mixture (about half) onto the sheets evenly so that you can no longer see the lasagne layer
  • Add another layer of lasagne sheets and do the same with the remaining mixture
  • Add another layer the lasagne sheets however do it so that the cream cheese is facing down
Step 3
  • Add water to the remaining sauce that was left in the jar so that there is enough to coat the top lasagne layer 
  • Add mozzarella slices and any other cheese of your choice
  • Bake in oven for 45 minutes at 160C fan/Gas mark 3
NB. Fab with garlic bread!

Salmon & Broccoli Pasta Bake




Ingredients
- 250g Pasta penne/shells/twirls
-300g Fresh broccoli
-4 Salmon fillets (skinless)
-600ml Milk
-25g Plain flour
-Black pepper
-Salt
-100g Anchiove fillets (Can get them tinned in oil)
-25g Butter
-150g Mascarpone
-Mozarella ball and/or cheddar cheese

Preparation time: 15 minutes                    Cooking time: 30 minutes

Step 1
  • Slice the fillets in half and place them in a 20cm X 30cm X 5cm dish so that the base is covered
  • Put the oven on at gas mark 5/ Fan 170C

Step 2
  • Boil the pasta according to packet instructions, do not overcook!
  • Cut the broccoli into medium sized florets and boil in a pan of water with a sprinkling of salt. Cook until they are firm as opposed to completely soft.
Step 3
  • Put butter, milk and flour in a pan and stir on medium heat until it starts to thicken. Add anchovies and basil and stir in mascarpone. Take off heat and add 2 tsp black pepper and 1/4 tsp salt (the anchovies are salty enough)
Step 4
  • Pour pasta and broccoli into mixture into tray on top of the salmon and slice the mozarella ball on top and any other cheese you like
  • Cook for 30 minutes in oven until cheese is golden brown

King Prawn & Chilli Linguine


A family favourite!

Ingredients
-260g linguine
-Garlic and ginger paste
-24 king prawns
-A red hot chilli, sliced in strips
-12 halved cherry tomatoes
-Large handful fresh basil
-1 teaspoon black pepper
-2 tbsp olive oil

Preparation time:5 minutes                     Cooking time: 15 minutes

Step 1
  • Cook linguine according to packet instructions
Step 2
  • Put olive oil in a wok, add 2 tbsp garlic and ginger paste. Then add chilli and king prawns. Cook on high heat for around 4-5 minutes.
  • Add basil and tomatoes and fry till they soften but still keep their shape (approx 3-4 minutes)
  • Add 1 tsp black pepper 
Step 3
  • Drain the linguine and add to wok
  • Serve with a slice of lime
NB. Tastes delicious with a drizzle of thai sweet chilli sauce!

Easy Pizzey Pizza

The quickest, easiest, cheapest and tastiest pizza you will ever eat!


Ingredients

Base:
-300g Strong bread flour
-7g yeast sachet
-Olive oil
-Salt

Topping:
-Passata
-3 mushrooms
-2 Mozzarella balls
-Sweetcorn
-Pepper

(Note: Use whatever toppings you like, basil, goats cheese, spinach etc)

Preparation time: 10 minutes                   Cooking time: 25 minutes

Step 1
  • Put flour, salt, 1 tbsp olive oil and yeast in a bowl, add 200ml warm water and mix. You will find that it's quite sticky at this stage.
  • Leave somewhere warm with a tea towel covering the bowl for 30 minutes.
Step 2
  • Slice the vegetables.
  • Roll out the dough with a rolling pin on a flat surface sprinkled with flour. Roll the dough so that it's fairly thin (approx 0.5cm), if it's too thick it won't cook.


Step 3
  • Lightly grease a baking tray with oil and transfer the pizza base to the baking tray
  • Spread the passata evenly and add the mozzarella slices
  • Add the rest of the toppings
  • Put in the oven for 25-30 minutes at Gas Mark 7/ 200C fan oven


NOTE:
I also made a BBQ pizza using the exact same steps however i just added 3 tbsp BBQ sauce to the passata and mixed it in a bowl and then added cooked chicken for the topping.

Tofu Stirfry Noodles - Delicious!

Tofu Stirfry Noodles

I like my food with a bit of spice hence I added a whole chilly - but you don't have to!




Ingredients

-Medium egg noodles (I find Sharwood dried ones the best, and used 2 portions for 2 people)
-Firm tofu stirfry
-Sesame oil
-Oyster sauce
-Soya sauce
-Fish sauce
-3 spring onions
-1 Red chilly
-100g Mushrooms
-1 pepper

Preparation time: 6 minutes                             Cooking time: 15 minutes


Step 1

  • Slice the mushrooms, peppers, spring onions and red chilly (into thin strips). 
  • Cut the tofu into medium sized cubes - not too small.

Step 2
  • Fry the tofu in sesame oil in high heat until all sides of the cubes are golden brown - this may take up to 15 minutes. Would be best to use a fryer but unfortunately I don't have one!

Step 3
  • Heat 3 tbsp sesame oil in a wok and add the vegetables. Put the peppers in first, add chillies, spring onions and mushrooms 2 minutes later. The peppers first because they need extra time to soften. 

Step 4
  • Boil the noodles for 5-6 minutes. Check to see if they are cooked, DO NOT OVERCOOK! Make sure they're cooked but more on the firm side than soft.
  • Drain the noodles. 

Step 5
  • As the vegetables begin to soften add 3 tablespoons on oyster and soya sauce and 1 table spoon fish sauce. Add a pinch of salt. Fry for a maximum of 8 minutes - you don't want to overcook.
  • Add the noodles
  • Generously drizzle soya sauce and serve!

Malteser & Marshmallow Tiffin

This is my all time favourite dessert, so quick and easy and doesn't even need to go in the oven!





Ingredients
- 130g Digestive biscuits ( 8.5 biscuits)
- Handful of marshmallows, preferably mini marshmallows
- 100g unsalted butter
- 150g Maltesers
-  220g chocolate - I tend to use twirl (personal preference)

Topping:
-220g chocolate
-25g unsalted butter

Preparation time: 15 minutes

Step 1
  • Crush the digestives in a large bowl with a wooden spoon
  • Add the marshmallows (If they're normal sized then rip them in half with hands)
  • Add the maltesers, some whole, some crushed
Step 2
  • Add the chocolate in a heatproof bowl and the 100g unsalted butter
  • Place the bowl over a larger pan filled with water 
  • Once the mixture is all melted with no lumps, pour it over the biscuit mixture
Step 3
  • Place the mixture in a 20cm X 20cm tray and pat flat with the back of spoon
  • Place in the fridge for an hour to let it set for 90 minutes
Step 4
  • For the topping melt the chocolate and butter in a bowl like was done for Step 2
  • Once melted pour over the tray and leave to set in the fridge for another hour
  • Cut into squares
